Ingredients
  

1 pound flank steak, trimmed

1 cup fresh spinach, chopped

1/2 cup roasted red peppers, sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh basil leaves

3 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper to taste

Kitchen twine or toothpicks for securing

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Flank Steak: Place the flank steak between two pieces of plastic wrap. Use a meat mallet to gently pound the steak to about 1/2 inch thickness. This helps tenderize the meat and makes it easier to roll.

      Season and Prepare Filling: In a small bowl, mix together the chopped spinach, roasted red peppers, feta cheese, minced garlic, and fresh basil. Drizzle in the olive oil, then season with salt and pepper to taste.

        Assemble Pinwheels: Lay the flank steak flat on a clean surface. Spread the filling mixture evenly over the steak, leaving a 1-inch border on all sides.

          Roll the Steak: Starting from one end, roll the steak tightly into a log. Make sure to keep the filling inside as you roll.

            Secure the Roll: Use kitchen twine or toothpicks to secure the ends and middle of the rolled steak to prevent it from unraveling during cooking.

              Sear the Pinwheels: Heat a large oven-safe skillet over medium-high heat. Add a bit of olive oil, and once hot, place the pinwheels seam-side down. Sear for about 3-4 minutes on each side until browned.

                Bake the Pinwheels: Once seared, transfer the skillet to the preheated oven. Bake for 15-20 minutes or until the steak reaches your desired level of doneness (medium-rare is approximately 135°F (57°C)).

                  Rest and Slice: Remove the pinwheels from the oven and let them rest for 5-10 minutes. Carefully remove the twine or toothpicks. Slice into 1-inch thick rounds.

                    Serve: Arrange the pinwheels on a serving platter and drizzle with a little extra olive oil or a balsamic reduction if desired. Enjoy!
