Easy Egg Fried Rice

2 cups cooked jasmine rice (preferably day-old)

2 large eggs

1/2 cup green peas (fresh or frozen)

1/2 cup diced carrots

3 green onions, chopped (white and green parts separated)

3 tablespoons soy sauce (adjust to taste)

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon ginger, grated (optional)

Salt and pepper to taste

1 tablespoon vegetable oil for frying

Instructions
 

Prepare the Rice: If you don't have leftover rice, cook the jasmine rice according to the package instructions. Spread it out on a baking sheet to cool and dry for at least 30 minutes before using for the best texture in fried rice.

    Scramble the Eggs: Heat a non-stick wok or large skillet over medium heat. Add a splash of vegetable oil, then crack the eggs into the pan. Scramble them lightly and cook until just set. Remove from the pan and set aside.

      Sauté the Veggies: In the same pan, add the remaining vegetable oil. Sauté the minced garlic and ginger (if using) until fragrant, about 30 seconds. Then add the diced carrots and cook for about 3 minutes until they begin to soften.

        Add Peas and Onions: Stir in the green peas and the white parts of the green onions. Continue to sauté for another 2-3 minutes until the peas are heated through.

          Combine Rice: Add the cooled rice to the veggie mixture. Break up any clumps and stir well to combine. Let it fry for about 2-3 minutes, allowing the rice to get a little crispy on the bottom, stirring occasionally.

            Season the Rice: Pour the soy sauce and sesame oil over the rice, mixing well to ensure an even coating. Season with salt and pepper to your taste.

              Final Touches: Gently fold in the scrambled eggs and the green parts of the green onions. Stir everything together for 1-2 minutes until well combined and heated through.
