2 pounds Yukon Gold potatoes, peeled and cubed

1/2 cup unsalted butter, softened

1/2 cup heavy cream

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon ground nutmeg

Salt and black pepper, to taste

2 large eggs

1 cup grated Parmesan cheese

Fresh parsley, finely chopped (for garnish)

Instructions
 

Cook the Potatoes: In a large pot, add the peeled and cubed Yukon Gold potatoes. Cover them with cold water and add a generous pinch of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain well and let sit for a few minutes to steam off excess moisture.

    Mash the Potatoes: In a large mixing bowl, add the drained potatoes. Use a potato masher or ricer to mash until smooth and creamy.

      Mix in Ingredients: Add the softened butter, heavy cream, garlic powder, onion powder, nutmeg, salt, and black pepper. Mix well until everything is fully incorporated and the mixture is smooth.

        Incorporate Eggs and Cheese: Let the potato mixture cool slightly before adding the eggs (this prevents curdling). Stir in the grated Parmesan cheese until evenly distributed.

          Pipe the Potatoes: Preheat your oven to 400°F (200°C). Using a piping bag with a star tip, pipe the potato mixture onto a baking sheet lined with parchment paper. You can create swirls, rosettes or any shape you like.

            Bake: Place the baking sheet in the preheated oven and bake for about 20-25 minutes, or until the tops are golden brown.

              Garnish and Serve: Remove from the oven, garnish with finely chopped parsley, and serve warm as a delightful side dish.
