Ingredients
  

1 pound ground beef

1 medium onion, chopped

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 teaspoon garlic powder

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

2 cups frozen tater tots

2 cups shredded cheddar cheese

1/4 cup fresh cilantro, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is translucent. Drain any excess fat.

      Stir in the black beans, corn, diced tomatoes, garlic powder, chili powder, cumin, salt, and pepper. Mix well and let simmer for about 5 minutes to marry the flavors.

        In a 9x13 inch baking dish, pour the beef mixture evenly into the bottom.

          Layer the frozen tater tots on top of the beef mixture, ensuring they cover the entire surface.

            Sprinkle the shredded cheddar cheese over the tater tots.

              Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden and crispy and the cheese is bubbly.

                Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro before serving.
