Ingredients

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup mozzarella cheese, shredded

½ cup cooked bacon, chopped

½ cup ranch dressing

1 cup spinach, chopped (fresh or frozen)

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon olive oil

2 large pizza doughs (store-bought or homemade)

Salt and pepper to taste

1 egg (for egg wash)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare Filling: In a large mixing bowl, combine the shredded chicken, mozzarella cheese, chopped bacon, ranch dressing, spinach, garlic powder, onion powder, salt, and pepper. Mix well until all the ingredients are evenly coated.

Roll Out Dough: On a floured surface, roll out each pizza dough into a rectangular shape, about ¼ inch thick. Cut each rectangle into 3 smaller rectangles, yielding 6 total pieces.

Fill Dough: Spoon a generous amount of the chicken mixture onto one half of each rectangle, leaving about 1 inch of space around the edges.

Fold and Seal: Fold the other half of the dough over the filling to create a pocket. Use a fork to crimp and seal the edges, ensuring the filling won’t escape during baking.

Brush with Egg Wash: In a small bowl, whisk the egg and brush it onto the top of each chicken bake for a golden brown finish.

Bake: Place the sealed chicken bakes onto the prepared baking sheet. Bake in the preheated oven for 20-25 minutes or until golden brown and cooked through.

Serve: Allow them to cool slightly before serving. They can be enjoyed warm or cooled, making them perfect for meal prep or a quick snack!
