1/2 cup granulated sugar

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/4 tsp nutmeg

1 large egg

1/2 cup unsweetened applesauce

1/4 cup milk (or non-dairy alternative)

1/4 cup vegetable oil

1 tsp vanilla extract

1 cup finely chopped apples (about 1 medium apple)

1/4 cup brown sugar (for topping)

1/2 tsp cinnamon (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin or use muffin liners.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, ground cinnamon, and nutmeg until well combined.

      Combine Wet Ingredients: In another bowl, beat in the egg, then add the applesauce, milk, vegetable oil, and vanilla extract. Stir until the mixture is smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix! Fold in the chopped apples.
