Easy Chicken Taco Soup

1 lb boneless, skinless chicken breasts

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

1 packet taco seasoning (about 1 oz)

4 cups chicken broth

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 cup salsa

1 tablespoon olive oil

1 teaspoon ground cumin

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Avocado slices (optional, for topping)

Shredded cheese (optional, for topping)

Sour cream (optional, for serving)

Instructions
 

Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add diced onion, bell pepper, and minced garlic. Sauté until the vegetables are softened and the onion is translucent, about 5 minutes.

    Add Chicken & Spices: Place the chicken breasts in the pot and sprinkle the taco seasoning and ground cumin over them. Mix well to coat the chicken with the spices.

      Pour in Remaining Ingredients: Add the black beans, corn, diced tomatoes (with their juice), salsa, and chicken broth to the pot. Stir everything together until well combined.

        Simmer the Soup: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 20-25 minutes, or until the chicken is cooked through.

          Shred the Chicken: Remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the soup and stir to combine. Taste and adjust seasoning with salt and pepper if needed.

            Serve: Ladle the soup into bowls and top with fresh cilantro, avocado slices, shredded cheese, and a dollop of sour cream, if desired.
