2 cups cooked jasmine rice (preferably day-old)

1 cup cooked chicken, diced (leftover or rotisserie chicken works great)

2 tablespoons vegetable oil

2 large eggs, lightly beaten

1 cup mixed vegetables (peas, carrots, and corn)

3 green onions, chopped (white and green parts separated)

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional for extra flavor)

1 teaspoon sesame oil

Salt and black pepper to taste

Fresh cilantro for garnish (optional)

Prepare the Ingredients: If using freshly cooked rice, spread it out on a baking sheet and let it cool for about 30 minutes to remove excess moisture. This helps prevent mushy fried rice.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until it’s hot but not smoking.

      Scramble the Eggs: Add the beaten eggs to the skillet. Scramble the eggs until they are just set, about 1-2 minutes. Remove the eggs from the skillet and set them aside.

        Sauté Vegetables: In the same skillet, add the chopped green onions (white parts) and mixed vegetables. Sauté for about 3-4 minutes until the vegetables are tender and heated through.

          Add Chicken and Rice: Stir in the diced chicken and break up any clumps in the day-old rice using a spatula. Mix well, ensuring every grain is separated. Cook for another 2-3 minutes until heated through.

            Season the Rice: Pour in the soy sauce, oyster sauce (if using), and sesame oil. Toss everything together to ensure even seasoning. Continue cooking for 2-3 minutes, allowing the rice to get slightly crispy on the bottom if desired.

              Combine and Serve: Gently fold the scrambled eggs back into the fried rice. Taste and add salt and pepper as needed. Remove from heat. Garnish with fresh cilantro and the green parts of the chopped green onions.
