Easy Chicken Fajita Quesadillas

1 lb boneless, skinless chicken breast, thinly sliced

2 tablespoons olive oil

1 bell pepper (any color), sliced

1 medium onion, sliced

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

½ teaspoon smoked paprika

Salt and pepper to taste

4 large flour tortillas

2 cups shredded Mexican blend cheese

Optional toppings: sour cream, salsa, guacamole, fresh cilantro

Instructions
 

Marinate Chicken: In a bowl, combine the sliced chicken with olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Toss until the chicken is evenly coated. Let it marinate for at least 15 minutes.

    Cook Vegetables: In a large skillet, heat a little olive oil over medium heat. Add the sliced bell pepper and onion, sautéing until they soften and become slightly caramelized, about 5-7 minutes. Remove from the skillet and set aside.

      Cook Chicken: In the same skillet, add the marinated chicken and cook until fully cooked through and golden brown, about 7-10 minutes, stirring occasionally. Ensure no pink remains in the chicken. Once cooked, return the sautéed vegetables to the skillet and mix well.

        Assemble Quesadillas: On half of each tortilla, sprinkle a generous amount of shredded cheese, followed by the chicken and veggie mixture. Top with more cheese, then fold the tortilla over to create a half-moon shape.

          Cook Quesadillas: Wipe out the skillet and heat it over medium heat again. Place the folded quesadilla in the skillet. Cook for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted.

            Slice and Serve: Remove from the skillet, and allow to cool for a minute. Cut the quesadilla into wedges and serve warm with optional toppings such as sour cream, salsa, guacamole, and chopped cilantro.
