Easy Chicken Cobbler with Red Lobster Biscuits

For the Chicken Cobbler:

2 cups cooked chicken, shredded

1 cup frozen mixed vegetables (carrots, peas, corn)

1 cup chicken broth

1/2 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1 tablespoon cornstarch (optional, for thickening)

For the Biscuit Topping:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 teaspoon garlic powder

1/2 cup cold butter, cubed

3/4 cup milk

1/2 cup shredded cheddar cheese

1/4 cup chopped fresh chives (optional)

For the Garlic Butter Glaze:

1/4 cup melted butter

1 teaspoon garlic powder

1/4 teaspoon salt

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chicken Cobbler Filling:

      - In a large skillet, heat the olive oil over medium heat. Add the shredded chicken, frozen vegetables, garlic powder, onion powder, thyme, salt, and pepper. Stir well to combine.

        - Pour in the chicken broth and milk. Bring to a simmer and stir occasionally for about 5 minutes.

          - If a thicker consistency is desired, mix the cornstarch with a little cold water and stir it into the mixture. Cook for an additional 2 minutes until thickened.

            Transfer to Baking Dish: Pour the chicken mixture into a greased 9x13 inch baking dish and spread it evenly.

              Prepare Biscuit Topping:

                - In a mixing bowl, whisk together the flour, baking powder, salt, and garlic powder.

                  - Add the cold butter and mix until the mixture resembles coarse crumbs. You can use your fingers or a pastry cutter for this.

                    - Pour in the milk and stir until just combined. Fold in the cheddar cheese and chopped chives if using.

                      Assemble the Cobbler:

                        - Drop spoonfuls of the biscuit mixture over the chicken filling, leaving some gaps for the filling to peek through.

                          Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the biscuit topping is golden brown and cooked through.

                            Prepare the Garlic Butter Glaze:

                              - While the cobbler is baking, combine melted butter, garlic powder, and salt in a small bowl.

                                Finish: Once the cobbler is done, remove it from the oven and brush the garlic butter glaze over the biscuit topping. Allow to cool for a few minutes before serving.

                                  Serve: Scoot a portion onto a plate and enjoy your meal hot!
