Ingredients
  

2 cups all-purpose flour

2 cups finely grated carrots (about 4 medium carrots)

1 cup granulated sugar

1/2 cup brown sugar, packed

1 cup vegetable oil

4 large eggs

1 tsp vanilla extract

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 cup crushed pineapple, drained

1 cup chopped walnuts or pecans (optional)

1/2 cup raisins (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

    Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg, and set aside.

      Prepare the Wet Ingredients: In a large mixing bowl, whisk together the granulated sugar, brown sugar, and vegetable oil until smooth. Add the eggs one at a time, whisking after each addition until fully incorporated. Stir in the vanilla extract and drained crushed pineapple.

        Combine Ingredients: Gradually add the dry mixture to the wet mixture, stirring until just combined. Do not overmix! Gently fold in the grated carrots, nuts, and raisins if using.

          Bake: Divide the batter equally between the two prepared pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

            Cool: Remove from the oven and allow the cakes to cool in the pans for about 10 minutes. Carefully turn them out onto wire racks to cool completely.

              Frosting (Optional): While the cakes are cooling, you can prepare a simple cream cheese frosting if desired. Beat together 8 oz of cream cheese, 1/2 cup of unsalted butter, 4 cups of powdered sugar, and 1 tsp of vanilla extract until smooth and fluffy.

                Assemble the Cake: Once the cakes are completely cooled, spread a generous amount of cream cheese frosting between the layers and over the top and sides of the cake.
