8 large flour tortillas

8 large eggs

1 cup milk

1 cup shredded cheddar cheese

1 cup cooked breakfast sausage, crumbled (or substitute with diced bell peppers for a vegetarian option)

1 cup black beans, rinsed and drained

1 cup diced tomatoes (fresh or canned)

1 avocado, diced (optional)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Salsa (for serving)

Instructions
 

Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until fully combined.

    Cook the Eggs: In a large skillet over medium heat, pour in the egg mixture. Cook, stirring occasionally, until the eggs are just set but still slightly soft (about 5-7 minutes). Remove from heat and let cool slightly.

      Combine Ingredients: In a mixing bowl, combine the cooked eggs, cooked breakfast sausage, black beans, diced tomatoes, and shredded cheese. Mix until everything is evenly distributed.

        Assemble Burritos: Lay a tortilla flat on a clean surface. Spoon a generous amount of the egg mixture onto the center of each tortilla (about 1/2 cup). If using, add a few pieces of diced avocado on top.

          Wrap the Burritos: Fold in the sides and then roll the tortilla tightly from the bottom up to form a burrito. Ensure it’s tightly wrapped to avoid spillage during freezing.

            Freezing: Wrap each burrito in plastic wrap, then place them in a resealable freezer bag or airtight container. Label the bags with the date for reference.

              Reheat Instructions: When ready to eat, remove a burrito from the freezer. Unwrap it, place it on a microwave-safe plate, and cover with a damp paper towel. Microwave on high for about 2-3 minutes, flipping halfway through. Alternatively, bake in an oven at 350°F (175°C) for 20-25 minutes until heated through.
