Ingredients

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

3 cloves garlic, minced

1-inch piece of ginger, minced

1 bell pepper (red or green), sliced

1 onion, sliced

1 tablespoon fresh black pepper (or to taste)

1 tablespoon oyster sauce (optional for extra depth)

1 tablespoon sesame oil

2 green onions, chopped (for garnish)

Cooked rice or noodles (for serving)

Instructions

In a medium bowl, combine chicken pieces, soy sauce, and cornstarch. Mix well to ensure chicken is coated, and let it marinate for about 15 minutes to enhance flavor and tenderness.

Heat vegetable oil in a large skillet or wok over medium heat. Once hot, add the marinated chicken in a single layer. Sauté for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the pan and set aside.

In the same skillet, add minced garlic and ginger. Sauté for about 30 seconds until fragrant.

Add the sliced bell pepper and onion to the skillet, stirring frequently until the vegetables are tender but still crisp, about 3-4 minutes.

Return the cooked chicken to the skillet. Sprinkle with black pepper and add the oyster sauce if using. Stir well to combine all the ingredients. Allow to cook for another 2 minutes to heat everything through.

Drizzle with sesame oil and give a final toss. Remove from heat and garnish with chopped green onions before serving.

Serve the black pepper chicken with hot, steamed rice or toss it over noodles for a delicious meal.
