Ingredients

4 bone-in skin-on chicken thighs

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Make the Marinade: In a bowl, whisk together the honey, Dijon mustard, olive oil, minced garlic, dried thyme, salt, and black pepper until well combined.

Prepare the Chicken: Place the chicken thighs in a large baking dish. Pour the marinade over the chicken, ensuring each piece is well coated. Let it marinate for at least 15 minutes for better flavor (or up to 2 hours in the fridge for best results).

Bake the Chicken: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. This will help keep the chicken moist.

Uncover and Continue Baking: After 30 minutes, remove the foil and continue to bake for an additional 15-20 minutes, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C).

Serve: Once done, take the chicken out of the oven and let it rest for 5 minutes. Garnish with freshly chopped parsley and serve with your choice of side, like roasted vegetables or rice.
