2 large cucumbers, thinly sliced

1 tablespoon salt

3 tablespoons rice vinegar

2 tablespoons soy sauce (low sodium preferred)

1 tablespoon sesame oil

1 tablespoon sugar (or honey)

1 garlic clove, minced

1 teaspoon fresh ginger, grated

2 green onions, finely chopped

1 tablespoon sesame seeds

Fresh cilantro leaves for garnish (optional)

Instructions
 

Prepare Cucumbers: In a large bowl, sprinkle the sliced cucumbers with salt and toss to coat. Let them sit for about 10 minutes to draw out excess moisture.

    Make Dressing: In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, minced garlic, and grated ginger until the sugar is dissolved.
