Easy Amish Apple Fritter Bread

Ingredients
  

2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

2 large eggs

1/2 cup milk

1/4 cup vegetable oil

2 teaspoons vanilla extract

2 cups peeled and diced apples (such as Granny Smith or Honeycrisp)

1/4 cup brown sugar

1 teaspoon cinnamon (for topping)

1/2 cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.

    In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and 1 teaspoon of cinnamon until well combined.

      In another bowl, beat the eggs and then add the milk, vegetable oil, and vanilla extract. Mix until smooth.

        Pour the wet ingredients into the dry ingredients and stir gently until just combined.

          Fold in the diced apples until they are evenly distributed throughout the batter.

            In a small bowl, mix together the brown sugar and 1 teaspoon cinnamon.

              Pour half of the batter into the prepared loaf pan. Sprinkle half of the brown sugar cinnamon mixture over the batter. Add the remaining batter on top and finish with the rest of the brown sugar cinnamon mixture.

                Using a knife or skewer, gently swirl the batter to create a marbled effect, being careful not to overmix.

                  Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.

                    Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

                      For the glaze, whisk together the powdered sugar and 2 tablespoons of milk until smooth. Drizzle it over the cooled bread.
