1 can (15 oz) black beans, rinsed and drained

1 cup cooked quinoa

1/2 cup breadcrumbs (or gluten-free alternative)

1/2 cup corn kernels (fresh or frozen)

1 small red bell pepper, finely diced

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1 tablespoon soy sauce (or tamari for gluten-free)

Fresh cilantro, chopped (for garnish)

Hamburger buns, for serving

Lettuce, tomato, avocado, or other toppings (to personal preference)

Instructions
 

Prepare the Beans: In a large mixing bowl, mash the drained black beans with a fork or potato masher until slightly chunky, leaving a few larger pieces for texture.

    Mix Ingredients: Add the cooked quinoa, breadcrumbs, corn, diced red bell pepper, onion, garlic, cumin, smoked paprika, salt, black pepper, olive oil, and soy sauce to the bowl. Mix everything together until well combined. You should have a mixture that holds together when formed into patties; if it's too crumbly, add a splash of water or another tablespoon of olive oil.

      Form Patties: With your hands, divide the mixture into 4 equal parts and shape them into burger patties. If the mixture feels too wet, you can add a bit more breadcrumbs until you achieve the right consistency.

        Preheat the Grill: Preheat your grill to medium heat (about 375°F/190°C). You can also use a grill pan on the stovetop if you prefer.

          Grill the Burgers: Lightly oil the grill grates or brush the patties with olive oil to prevent sticking. Place the patties on the grill and cook for about 5-7 minutes on each side or until they are golden brown and heated through.
