12 large fresh strawberries

1/2 cup mascarpone cheese

2 tablespoons powdered sugar

1 teaspoon vanilla extract

1/4 cup finely chopped pistachios

1 tablespoon lemon zest

A pinch of sea salt

Fresh mint leaves for garnish

Prepare the Strawberries: Rinse the strawberries under cold water and gently pat them dry with a paper towel. Using a sharp knife, carefully hull each strawberry (removing the green top and a bit of the white core) to create a cavity for the filling.
