4 large russet potatoes, peeled and cubed

1 cup heavy cream

1 cup grated sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup unsalted butter

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional, for heat)

1/4 cup fresh chives, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare Potatoes: In a large pot, boil the cubed potatoes in salted water until fork-tender (about 15 minutes). Drain and set aside.

      Sauté Aromatics: In a skillet over medium heat, melt the butter and add the chopped onion. Sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Make Sauce: In a large mixing bowl, combine the heavy cream, half of the cheddar cheese, Parmesan cheese, salt, black pepper, smoked paprika, and cayenne pepper. Add the sautéed onion and garlic mixture and mix well.

          Combine Ingredients: Gently fold the drained potatoes into the creamy mixture until well-coated.

            Transfer to Baking Dish: Spoon the potato mixture into a greased 3-quart baking dish. Smooth the top with a spatula.

              Top with Cheese: Sprinkle the remaining cheddar cheese evenly over the top.

                Bake: Bake in the preheated oven for 30-40 minutes, until the top is golden and bubbly.
