Ingredients
  

1 cup glutinous rice flour (mochi flour)

1/4 cup granulated sugar

3/4 cup water

Cornstarch (for dusting)

1 cup fresh strawberries, hulled

2 tablespoons sweetened condensed milk (optional)

1/2 cup red bean paste (optional, for filling)

Instructions
 

Prepare the Strawberries: If using red bean paste, take a small amount (about 1 teaspoon) and flatten it into a disc to wrap around a strawberry later.

    Make the Mochi Dough: In a microwave-safe bowl, mix glutinous rice flour and sugar. Gradually add water while stirring until smooth.

      Microwave the Mixture: Cover the bowl with plastic wrap, leaving a small opening for steam to escape. Microwave on high for 1 minute. Stir the mixture, cover, and microwave for another minute. Repeat for a total of 3 to 4 minutes or until the mixture is thick and sticky.

        Cool the Mochi Dough: Allow the dough to cool for a few minutes. It will be very hot, so be careful.

          Dust Your Surface: Generously dust your working surface and hands with cornstarch to prevent sticking.

            Shape the Mochi: Take a portion of the mochi dough (about the size of a golf ball) and flatten it in your hand. If using, insert a strawberry into the middle or if you’re adding the red bean paste, place the bean paste on the strawberry, then wrap the mochi around it, sealing well.

              Finishing Touches: Once all strawberries are wrapped in mochi, dust them lightly with cornstarch to prevent sticking.

                Chill & Serve: Place the mochi on a plate and refrigerate for about 30 minutes before serving for a firmer texture. Drizzle with sweetened condensed milk if desired.
