4 boneless, skinless chicken thighs

2 cups chicken broth

1 cup diced carrots

1 cup diced potatoes

1 cup celery, chopped

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1/2 teaspoon paprika

Salt and pepper, to taste

1 tablespoon olive oil

2 tablespoons fresh parsley, chopped (for garnish)

Sauté the Aromatics: In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until they become translucent and fragrant, about 3-4 minutes.

    Prepare the Slow Cooker: Transfer the sautéed onions and garlic to the slow cooker. Layer the diced carrots, potatoes, and celery over the onions.

      Season the Chicken: In a bowl, season the chicken thighs with thyme, rosemary, paprika, salt, and pepper. Place the seasoned chicken on top of the vegetables in the slow cooker.

        Add the Broth: Pour the chicken broth over the ingredients in the slow cooker, ensuring everything is submerged.

          Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
