1 lb boneless, skinless chicken breasts

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

1 can (8 oz) tomato sauce

1 medium onion, chopped

2 cloves garlic, minced

2 cups chicken broth

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon oregano

Optional toppings: avocado, shredded cheese, sour cream, cilantro, tortilla chips

Instructions
 

Start by placing the chicken breasts at the bottom of the slow cooker.

    Add the black beans, corn, diced tomatoes with green chilies, and tomato sauce over the chicken.

      Sprinkle the chopped onion and minced garlic on top of the mixture.

        Pour in the chicken broth, and then add the chili powder, cumin, paprika, salt, black pepper, and oregano. Stir gently to combine all ingredients.

          Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is thoroughly cooked and tender.

            Once cooked, remove the chicken breasts and shred them with two forks. Return the shredded chicken to the slow cooker and stir well to combine.

              Taste the soup and adjust seasonings if necessary.

                Serve hot with optional toppings like avocado, shredded cheese, a dollop of sour cream, fresh cilantro, and crunchy tortilla chips.
