1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, finely chopped

1 bell pepper (red or yellow), sliced

2 cups broccoli florets

3 cups chicken broth

8 oz (225g) egg noodles

1/4 cup soy sauce

2 tablespoons honey

1 tablespoon rice vinegar

1 tablespoon ginger, grated

1 teaspoon sesame oil

Salt and pepper to taste

Sesame seeds and sliced green onions for garnish

Instructions
 

Heat oil: In a large pot, heat olive oil over medium heat. Add the diced chicken thighs, season with salt and pepper, and sauté until golden brown, about 5-7 minutes.

    Add aromatics: Stir in the minced garlic, chopped onion, and sliced bell pepper. Cook for about 3-4 minutes until the onion is translucent.

      Incorporate broccoli: Add broccoli florets to the pot and stir well.

        Prepare sauce: In a bowl, mix together chicken broth, soy sauce, honey, rice vinegar, ginger, and sesame oil.

          Combine and cook: Pour the sauce mixture into the pot, then add the egg noodles. Stir to combine and ensure the noodles are submerged. Bring to a gentle boil.

            Simmer: Reduce the heat to low, cover the pot, and let it simmer for about 10-12 minutes, or until the noodles are cooked and the broth has slightly thickened. Stir occasionally to prevent sticking.

              Taste and adjust: Taste and adjust seasoning if necessary. If it's too sweet for your liking, add a splash more soy sauce.

                Serve: Once cooked, remove from heat. Serve warm, garnished with sesame seeds and sliced green onions for added flavor and crunch.
