Delicious Mississippi Mud Potatoes Recipe

Ingredients
  

4 large russet potatoes, scrubbed and halved

½ cup butter, melted

1 cup sour cream

1 cup shredded cheddar cheese

½ cup cooked bacon, crumbled

¼ cup chopped green onions

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and black pepper, to taste

¼ cup chopped fresh parsley (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    Place the halved potatoes cut side down in a large pot of salted water. Bring to a boil and cook for about 12-15 minutes or until fork-tender. Drain and let cool slightly.

      Once the potatoes are cool to handle, scoop out the flesh into a large bowl, leaving about 1/4-inch of potato around the skin for structure.

        Mash the potato flesh with melted butter, sour cream, garlic powder, smoked paprika, salt, and black pepper until smooth and creamy.

          Fold in half of the shredded cheddar cheese, the crumbled bacon, and half of the chopped green onions to incorporate flavor and texture.

            Carefully spoon the mixture back into the potato skins, heaping it generously.

              Top the stuffed potatoes with the remaining cheddar cheese and a sprinkle of smoked paprika for extra flavor.

                Arrange the stuffed potatoes on a baking sheet lined with parchment paper and bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.

                  Once removed from the oven, garnish with fresh parsley and the remaining green onions.
