1 pound ground pork or chicken

1 cup carrots, finely julienned

1 cup green beans, finely chopped

1/2 cup shrimp, peeled and chopped (optional)

1/4 cup onion, finely chopped

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 teaspoon ground black pepper

1/2 teaspoon salt, or to taste

1 pack spring roll wrappers (20-30 pieces)

2 tablespoons water (for sealing)

Oil, for frying

Prepare the Filling: In a large bowl, combine the ground pork or chicken, carrots, green beans, shrimp (if using), onion, garlic, soy sauce, oyster sauce, black pepper, and salt. Mix well until all ingredients are fully incorporated.

    Wrap the Lumpia: Take a spring roll wrapper and place it on a flat surface with one corner pointing towards you. Spoon about 2 tablespoons of the filling onto the wrapper, spreading it evenly in a line near the corner. Fold the bottom corner of the wrapper over the filling, then fold in the side corners, and roll tightly until you reach the top edge. Use a bit of water to seal the edge of the wrapper. Repeat until all filling is used.

      Heat the Oil: In a deep frying pan or a pot, heat oil over medium heat. You want enough oil for deep frying (about 2-3 inches deep).

        Fry the Lumpia: Once the oil is hot (about 350°F or 175°C), carefully place the lumpia in the oil in batches, without overcrowding the pan. Fry for about 3-4 minutes, or until golden brown and crispy, turning occasionally for even cooking.

          Drain and Cool: Once cooked, remove the lumpia with a slotted spoon and place them on paper towels to drain excess oil.

            Serve: Serve the lumpia hot with a side of sweet and sour sauce, vinegar dipping sauce, or your favorite sauce for a perfect treat!
