Ingredients
  

1 cup water

1/2 cup unsalted butter

2 tablespoons granulated sugar

1/4 teaspoon salt

1 cup all-purpose flour

2 large eggs

1 teaspoon vanilla extract

Oil for frying (vegetable or canola)

1/2 cup granulated sugar (for coating)

1 teaspoon ground cinnamon

Instructions
 

In a medium saucepan, combine the water, butter, 2 tablespoons of sugar, and salt. Bring the mixture to a rolling boil over medium heat.

    Once boiling, reduce the heat to low and add the flour all at once. Stir vigorously with a wooden spoon until the mixture forms a smooth ball and pulls away from the sides of the pan, about 1-2 minutes.

      Remove the pan from the heat and let it cool for about 5 minutes.

        Add the eggs one at a time, stirring well after each addition until fully incorporated. Mix in the vanilla extract. The dough should be smooth and slightly sticky.

          Heat oil in a deep frying pan over medium heat until it reaches 350°F (175°C).

            Transfer the dough to a piping bag fitted with a large star tip. Squeeze out small bite-sized pieces (about 1 inch long) directly into the hot oil, cutting the dough with scissors.

              Fry the churro bites in batches, being careful not to overcrowd the pan, for about 2-3 minutes, or until golden brown. Use a slotted spoon to remove them from the oil and let them drain on paper towels.

                In a shallow dish, mix together the 1/2 cup of sugar and the ground cinnamon. While the churro bites are still warm, toss them in the cinnamon-sugar mixture until fully coated.

                  Let cool slightly before serving. Enjoy your delicious churro bites with chocolate sauce or caramel for dipping if desired!
