Ingredients
  

1 cup large marshmallows

1 cup pancake mix

1 cup cold sparkling water

1 teaspoon vanilla extract

1/2 teaspoon cinnamon (optional)

Oil for frying (vegetable or canola)

Powdered sugar for dusting

Chocolate sauce for drizzling (optional)

Instructions
 

In a mixing bowl, combine pancake mix, cold sparkling water, vanilla extract, and cinnamon (if using). Mix until smooth and slightly thickened.

    Heat the oil in a deep pot or fryer to around 350°F (175°C).

      Skewer the marshmallows with toothpicks or small skewers to make handling easier.

        Dip each marshmallow into the batter, ensuring it’s completely coated.

          Carefully place the battered marshmallows into the hot oil, frying in batches to avoid overcrowding. Fry for about 1-2 minutes or until golden brown.

            Use a slotted spoon to remove the fried marshmallows and drain them on paper towels.

              Once cooled slightly, dust with powdered sugar and drizzle with chocolate sauce if desired.

                Serve warm and enjoy your heavenly treat!
