24 Oreo cookies (plus 2 for garnish)

5 tablespoons unsalted butter, melted

16 oz cream cheese, softened

⅔ cup granulated sugar

1 teaspoon vanilla extract

2 cups heavy whipping cream

1 tablespoon powdered sugar

½ cup mini chocolate chips (optional)

Instructions
 

Prep the Crust: In a food processor, blend 24 Oreo cookies into fine crumbs. In a medium bowl, combine the crumbs with melted butter. Stir until the mixture resembles wet sand.

    Form the Crust: Press the Oreo mixture firmly into the bottom of a 9-inch springform pan. Use the back of a measuring cup to ensure it’s packed tightly. Place in the refrigerator to chill while preparing the filling.

      Make the Filling: In a large mixing bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth and creamy.

        Whip the Cream: In another bowl, whip the heavy cream with powdered sugar until stiff peaks form. This could take about 3-5 minutes with an electric mixer.

          Combine Mixtures: Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the whipped cream. If desired, fold in the mini chocolate chips for added texture.

            Fill the Crust: Pour the cheesecake filling over the chilled Oreo crust. Smooth the top with a spatula and cover with plastic wrap.

              Chill the Cheesecake: Refrigerate for at least 4 hours or until set. For best results, leave it in the fridge overnight.

                Garnish and Serve: Once fully set, remove the cheesecake from the springform pan. Garnish with crushed Oreos on top and add the two reserved whole Oreos for decoration. Slice and serve chilled.
