Ingredients
  

8 lasagna noodles, broken into pieces

2 tablespoons olive oil

1 small onion, diced

3 cloves garlic, minced

1 pound ground Italian sausage (or turkey for a lighter option)

4 cups chicken broth

1 cup heavy cream

1 cup milk

1 teaspoon Italian seasoning

½ teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

1 cup spinach leaves, chopped

2 cups ricotta cheese

1 cup grated Parmesan cheese

2 cups shredded mozzarella cheese

Fresh basil for garnish (optional)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until softened.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the ground Italian sausage to the pot, breaking it up with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

        Pour in the chicken broth, heavy cream, and milk; stir well to combine.

          Add the broken lasagna noodles, Italian seasoning, red pepper flakes, salt, and pepper. Bring the mixture to a boil, then reduce to a simmer.

            Allow the soup to simmer for 15-20 minutes, stirring occasionally, until the noodles are tender.

              Stir in the chopped spinach and let it wilt for about 2 minutes.

                In a separate bowl, mix the ricotta cheese, half of the Parmesan cheese, and a pinch of salt and pepper.

                  Serve the soup hot, spooning a dollop of the ricotta mixture into each bowl and sprinkling with the remaining Parmesan and shredded mozzarella cheese.

                    Optionally, garnish with fresh basil before serving.
