8 oz (225g) high-quality dark chocolate (70% cocoa or more), chopped

2 tablespoons unsalted butter

3 large eggs, separated

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

A pinch of sea salt

Instructions
 

Melt Chocolate: In a heatproof bowl, combine the chopped dark chocolate and butter. Set the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and allow to cool slightly.

    Whip Egg Yolks: In a separate bowl, whisk together egg yolks and granulated sugar until pale and thick. Add vanilla extract and mix well.

      Combine Mixtures: Gradually add the melted chocolate to the egg yolk mixture, stirring continuously until fully incorporated.

        Beat Egg Whites: In a clean bowl, whip the egg whites and a pinch of sea salt until stiff peaks form. Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

          Whip the Cream: In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mix until smooth and no white streaks remain.

            Chill: Spoon the mousse into serving cups or ramekins. Chill in the refrigerator for at least 2 hours to allow the mousse to set.
