Ingredients

For the Brownies:

1 cup unsalted butter (2 sticks)

8 ounces dark chocolate (60-70% cocoa), chopped

1 cup granulated sugar

3/4 cup packed light brown sugar

4 large eggs

1 teaspoon pure vanilla extract

1 cup all-purpose flour

1/4 teaspoon sea salt

For the Raspberry Truffle Filling:

8 ounces dark chocolate (60-70% cocoa), chopped

1/2 cup heavy cream

1 cup fresh raspberries (plus extra for garnish)

1 tablespoon raspberry extract (optional)

For the Topping:

1/4 cup unsweetened cocoa powder

1 tablespoon powdered sugar

Fresh mint leaves (for garnish)

Instructions

Preheat the Oven:

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan and line it with parchment paper, leaving some overhang for easy removal.

      Make the Brownies:

In a saucepan over low heat, melt the butter and chopped dark chocolate together, stirring constantly until smooth. Remove from heat and let it cool slightly.

          Combine Sugars and Eggs:

In a mixing bowl, combine the granulated sugar, light brown sugar, and the slightly cooled chocolate mixture. Stir until well combined. Add in the eggs, one at a time, mixing well after each addition. Incorporate the vanilla extract.

              Incorporate Dry Ingredients:

Sift the flour and salt together, then fold them into the chocolate mixture until just combined and no flour streaks remain.

                  Bake the Brownies:

Pour the brownie batter into the prepared pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let the brownies cool completely in the pan.

                      Prepare the Raspberry Truffle Filling:

Heat the heavy cream in a small saucepan over medium heat until it begins to simmer. Pour it over the chopped dark chocolate in a mixing bowl. Let it sit for 2-3 minutes, then stir until smooth. Stir in the fresh raspberries and raspberry extract (if using), mixing gently to incorporate the raspberries without smashing them.

                          Layer the Filling:

Once the brownies have cooled, spread the raspberry truffle filling evenly over the top. Refrigerate for about 30 minutes to allow the filling to set slightly.

                              Slice and Serve:

Use the overhanging parchment paper to lift the brownies out of the pan. Cut them into squares. Dust with cocoa powder and powdered sugar before serving, and garnish with extra raspberries and fresh mint leaves.

Enjoy your indulgent Dark Chocolate Raspberry Truffle Brownies that perfectly blend rich chocolate with a burst of raspberry flavor!
