2 large cucumbers

1 tablespoon sea salt

1/2 teaspoon black pepper

1 teaspoon red pepper flakes (adjust for heat preference)

1 tablespoon sesame oil

2 tablespoons rice vinegar

1 tablespoon soy sauce

1 tablespoon honey or maple syrup

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 green onions, chopped

1 tablespoon toasted sesame seeds

Fresh cilantro leaves for garnish (optional)

Instructions
 

Prep the Cucumbers: Slice the cucumbers in half lengthwise, then scoop out the seeds using a spoon to create a hollow center. This will help infuse the flavors and prevent excess water.

    Salt the Cucumbers: Sprinkle sea salt generously inside the hollows and on the outside of the cucumbers. Let them sit for about 15 minutes to draw out moisture. Pat dry with a paper towel.

      Make the Sauce: In a bowl, whisk together the black pepper, red pepper flakes, sesame oil, rice vinegar, soy sauce, honey (or maple syrup), minced garlic, and grated ginger until combined.

        Mix with Green Onions: Stir in the chopped green onions into the sauce, saving a little for garnish.

          Stuff the Cucumbers: Drizzle about half of the sauce mixture into each cucumber half. Use a spoon to make sure the sauce is spread evenly and fills the hollow sections.
