1 lb shrimp (peeled and deveined)

2 large cucumbers (sliced thinly)

1 cup cherry tomatoes (halved)

1/4 cup red onion (finely chopped)

2 avocados (diced)

1/4 cup fresh cilantro (chopped)

Juice of 2 limes

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

1/2 teaspoon crushed red pepper flakes (optional)

Instructions
 

Start by preparing the shrimp. In a medium saucepan, bring water to a boil. Season the boiling water with a pinch of salt. Add the shrimp and cook for 2-3 minutes, or until they turn pink and opaque. Drain and rinse under cold water to stop the cooking process. Set aside.

    In a large mixing bowl, combine the sliced cucumbers, cherry tomatoes, red onion, and diced avocados. Gently toss the ingredients together to mix.

      In a small bowl, whisk together lime juice, olive oil, garlic powder, salt, pepper, and crushed red pepper flakes (if using) to create a dressing.

        Add the cooked shrimp and the fresh cilantro to the vegetable mix. Drizzle the dressing over the salad and gently toss everything together, making sure all ingredients are well-coated.

          Let the salad sit for about 10 minutes to allow the flavors to meld before serving.

            Serve chilled or at room temperature in a large bowl or individual plates.
