2 cups cucumbers, thinly sliced

1 cup sweet bell peppers (red, yellow, or orange), julienned

1/2 red onion, thinly sliced

1/4 cup fresh mint leaves, chopped

1/4 cup fresh parsley, chopped

3 tablespoons olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey (or agave syrup for a vegan version)

Salt and pepper, to taste

Feta cheese or vegan feta, for topping (optional)

Instructions
 

Start by washing the cucumbers and sweet peppers thoroughly. Slice the cucumbers into thin rounds and julienne the bell peppers into strips.

    In a large mixing bowl, combine the cucumber slices, sweet pepper strips, and thinly sliced red onion.

      Add the chopped fresh mint and parsley to the bowl for a burst of flavor.

        In a small bowl, whisk together the olive oil, apple cider vinegar, honey (or agave), salt, and pepper until well combined to create the dressing.
