Ingredients

2 cups rolled oats

1 cup sliced almonds

1/2 cup sunflower seeds

1/2 cup shredded coconut (unsweetened)

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup honey or maple syrup

1/4 cup coconut oil (melted)

1 teaspoon vanilla extract

1/2 cup dried fruit (raisins, cranberries, or apricots) (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, sliced almonds, sunflower seeds, shredded coconut, cinnamon, and salt. Stir until evenly mixed.

Prepare Wet Ingredients: In a separate bowl, whisk together the honey (or maple syrup), melted coconut oil, and vanilla extract until well combined.

Combine Mixtures: Pour the wet mixture over the dry ingredients and stir well to ensure everything is evenly coated.

Spread and Bake: Spread the granola mixture onto the prepared baking sheet in an even layer. Bake in the preheated oven for 20-25 minutes, stirring halfway through to promote even browning. Keep an eye on it to prevent burning.

Cool and Add Fruit: Once golden and crunchy, remove the granola from the oven and let it cool on the baking sheet. After cooling, stir in any dried fruit if using.

Store: Once completely cooled, transfer the granola to an airtight container. It can be stored at room temperature for up to 2 weeks.
