Crockpot Pierogi Casserole with Kielbasa

Ingredients
  

1 pound pierogi (frozen or fresh, potato and cheese preferred)

1 pound kielbasa sausage, sliced into rounds

1 large onion, diced

2 cups shredded sharp cheddar cheese

1 cup sour cream

1 can (10.5 oz) cream of mushroom soup

1 cup chicken broth

2 cloves garlic, minced

1 teaspoon dried dill

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Layer Ingredients: Begin by adding half of the sliced kielbasa to the bottom of the crockpot. Then, layer half of the pierogi on top of the kielbasa.

    Add Veggies and Cheese: Sprinkle half of the diced onion and one cup of shredded cheddar cheese over the pierogi layers.

      Repeat Layers: Repeat the layering process by adding the remaining kielbasa, followed by the other half of the pierogi, the remaining onions, and then the last cup of cheddar cheese.

        Mix Sauce Ingredients: In a mixing bowl, combine the sour cream, cream of mushroom soup, chicken broth, minced garlic, dill, salt, and pepper. Whisk until well blended.

          Pour Sauce Over Layers: Pour the mixture evenly over the layered ingredients in the crockpot.

            Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the pierogi are tender and everything is heated through.

              Serve: Once finished, gently stir the casserole to combine layers. Serve hot, garnished with fresh parsley.
