Crockpot Pierogi Casserole with Kielbasa is a delightful dish that celebrates the rich culinary traditions of Eastern Europe, particularly Poland. Crockpot Pierogi Casserole with Kielbasa

Ingredients
  

1 (16 oz) package of frozen pierogi (potato and cheese or your favorite variety)

1 lb kielbasa, sliced

1 medium onion, diced

2 cups shredded cheddar cheese

1 cup sour cream

1 can (15 oz) diced tomatoes, undrained

2 cups chicken broth

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

Chopped green onions or parsley, for garnish

Instructions
 

Begin by greasing the inside of your crockpot with a bit of cooking spray to prevent sticking.

    Spread half of the frozen pierogi evenly across the bottom of the crockpot.

      Layer half of the sliced kielbasa on top of the pierogi, followed by half of the diced onion and half of the shredded cheddar cheese.

        In a medium bowl, combine the sour cream, diced tomatoes (with juice), chicken broth, garlic powder, onion powder, paprika, salt, and pepper. Mix well.

          Pour half of the sour cream mixture over the layered ingredients in the crockpot.

            Repeat the layers with the remaining pierogi, kielbasa, onion, cheddar cheese, and pour the remaining sour cream mixture on top.

              Cover the crockpot and cook on low for 4-6 hours or on high for 2-4 hours, until the kielbasa is heated through, and the pierogi are tender.

                Once done, give the casserole a gentle stir to combine the layers. If desired, top with additional cheese and let it melt for a few minutes with the lid on.

                  Serve hot, garnished with chopped green onions or parsley for a pop of color and freshness.
