To achieve a rich and velvety gravy, you may consider using cornstarch as a thickening agent. Cornstarch helps create the desired consistency, making the gravy cling beautifully to the chicken and any sides you choose to serve. If you prefer a thicker gravy, simply mix equal parts of cornstarch and cold water to create a slurry. This method ensures that there are no lumps in your gravy and provides a smooth finish.

Ingredients

4 boneless, skinless chicken breasts

1 packet (1 oz) ranch dressing mix

1 packet (1 oz) brown gravy mix

1 cup chicken broth

1 cup cream of chicken soup

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon black pepper

2 cups frozen mixed vegetables (optional)

Salt to taste

2 tablespoons cornstarch (optional, for thickening)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Season the chicken breasts lightly with salt and pepper and place them at the bottom of the crockpot.

Make the Gravy Mix: In a medium bowl, whisk together the ranch dressing mix, brown gravy mix, chicken broth, cream of chicken soup, chopped onion, minced garlic, and dried thyme until smooth.

Combine: Pour the gravy mixture over the chicken in the crockpot, ensuring that the chicken is well-coated.

Add Vegetables: If using, add the frozen mixed vegetables on top of the chicken and gravy mixture.

Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shredded.

Thicken the Gravy (Optional): If you prefer a thicker gravy, mix 2 tablespoons of cornstarch with an equal amount of cold water to create a slurry. Stir the slurry into the crockpot 30 minutes before serving and cook on high, allowing the gravy to thicken.

Serve: Once cooked, shred the chicken with two forks and stir to incorporate it with the gravy. Serve the chicken and gravy over cooked rice, mashed potatoes, or noodles, and garnish with fresh parsley.
