Crockpot Cheesy Chicken Broccoli Rice

1.5 lbs boneless, skinless chicken breasts

1 cup uncooked brown rice

3 cups chicken broth

2 cups fresh broccoli florets

1 cup shredded cheddar cheese

1 cup cream of mushroom soup (or cream of chicken soup)

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried thyme

1 tablespoon olive oil

Fresh parsley for garnish (optional)

Prep the Chicken: In a large skillet over medium heat, add olive oil. Sauté chopped onions and minced garlic until translucent, about 3-4 minutes.

    Combine Ingredients: In the crockpot, layer uncooked brown rice at the bottom. Place the sautéed onion and garlic mixture over the rice. Add the chicken breasts on top.

      Add Liquids: Pour the chicken broth and cream of mushroom soup over everything, ensuring the rice is well-covered. Sprinkle paprika, salt, black pepper, and dried thyme evenly over the chicken.

        Cook: Cover and cook on low for 6 hours or on high for 3 hours. When the chicken is cooked through (internal temperature of 165°F), remove the chicken and shred it lightly with two forks.

          Add Broccoli and Cheese: Stir in the fresh broccoli florets and shredded cheese. Return the shredded chicken to the crockpot and mix well. Cover for an additional 20-30 minutes on low to allow the broccoli to steam and the cheese to melt.

            Serve: Taste and adjust seasoning if needed. Garnish with fresh parsley if desired. Serve warm, and enjoy your creamy, cheesy dish!
