1/3 cup rice vinegar

1/4 cup honey

3 cloves garlic, minced

1 tablespoon ginger, minced

1 tablespoon cornstarch (optional, for thickening)

2 tablespoons water (optional, for cornstarch slurry)

1/2 teaspoon black pepper

1 tablespoon sesame seeds (for garnish)

2 green onions, sliced (for garnish)

Instructions
 

Prepare the Chicken: Place the chicken thighs at the bottom of the crock pot, ensuring they are evenly spread out.

    Mix the Sauce: In a medium bowl, combine the soy sauce, brown sugar, rice vinegar, honey, minced garlic, minced ginger, sesame oil, and black pepper. Whisk well until the brown sugar has dissolved.

      Pour and Cover: Pour the sauce over the chicken in the crock pot, making sure all pieces are well-coated. Cover with the lid.

        Cook: Set the crock pot to low heat and cook for 6-7 hours, or on high heat for 3-4 hours, until the chicken is tender and easily shredded.

          Thicken (Optional): If you prefer a thicker sauce, mix the cornstarch and water in a small bowl to create a slurry. Take the cooked chicken out of the crock pot, shred it with two forks, then stir the cornstarch mixture into the sauce and cook on high for an additional 15-20 minutes until thickened.
