4 bone-in, skin-on chicken thighs

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon dried thyme

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup chicken broth

½ cup heavy cream

2 tablespoons all-purpose flour

1 tablespoon Worcestershire sauce

Fresh parsley, chopped (for garnish)

Prepare the Chicken:

    - Pat the chicken thighs dry with paper towels. Season both sides generously with salt, black pepper, garlic powder, paprika, and dried thyme. Let them sit for 15-20 minutes to marinate at room temperature.

      Cook the Chicken:

        - In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs, skin-side down, and sear for about 6-7 minutes or until the skin is golden brown and crispy. Flip the chicken and cook for an additional 5-6 minutes on the other side until cooked through. A meat thermometer should read 165°F (75°C). Remove chicken from the skillet and set aside.

          Make the Gravy:

            - In the same skillet, reduce the heat to medium and add the chopped onion. Sauté for about 3-4 minutes until soft and translucent. Add the minced garlic and cook for another minute, stirring frequently so it doesn’t burn.

              - Sprinkle the flour over the onions and garlic, stirring constantly for about 1 minute to create a roux.

                - Gradually pour in the chicken broth while whisking to avoid lumps. Continue to whisk as the mixture thickens and bubbles.

                  - Stir in the heavy cream and Worcestershire sauce. Let the gravy simmer for another 3-4 minutes until it reaches your desired thickness.

                    Combine and Serve:

                      - Return the chicken thighs to the skillet, ensuring they are well coated with the gravy. Let them simmer for an additional 2-3 minutes to absorb the flavors.

                        - Garnish with fresh parsley before serving.
