2 medium zucchinis (about 1 pound)

1 teaspoon salt

1/2 cup all-purpose flour

1/2 cup grated Parmesan cheese

2 large eggs

2 green onions, finely chopped

2 cloves garlic, minced

Zest of 1 lemon

2 tablespoons fresh lemon juice

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

1/4 cup fresh parsley, chopped

Olive oil, for frying

Prep the Zucchini: Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a dish, sprinkle with salt, and let it sit for about 10 minutes to draw out excess moisture. After 10 minutes, use a clean kitchen towel to squeeze out as much liquid as possible.

    Mix the Batter: In a large mixing bowl, combine the drained zucchini, flour, grated Parmesan cheese, eggs, green onions, minced garlic, lemon zest, lemon juice, black pepper, red pepper flakes (if using), and parsley. Stir until everything is well mixed and forms a thick batter.

      Heat the Oil: In a large skillet, pour about 1/4 inch of olive oil over medium heat. Allow the oil to heat until shimmering.
