4 oz cream cheese, softened

¼ cup almond flour

1 large egg

1 tsp vanilla extract

2 tbsp granulated erythritol (or your preferred keto sweetener)

1 tsp cinnamon

½ tsp baking powder

Pinch of salt

Coconut oil or butter for frying

Instructions
 

In a mixing bowl, combine the softened cream cheese, almond flour, egg, vanilla extract, erythritol, cinnamon, baking powder, and salt. Mix until you have a smooth, homogeneous dough.

    Divide the dough into 6 equal portions and shape each portion into a flat rectangle (about ½ inch thick) on a parchment-lined surface.

      Carefully roll each rectangle into a cylinder, starting from one end. Pinch the edges to seal the roll completely.

        Heat a skillet over medium-low heat and add a tablespoon of coconut oil or butter.

          Once the oil is hot, add the roll-ups to the skillet, seam-side down, and cook for about 4-5 minutes on each side or until they turn golden and crispy.

            Remove the roll-ups from the skillet and let them drain on a paper towel for a minute. For added sweetness, sprinkle a little extra erythritol and cinnamon on top while they're still warm.
