1 cup almond flour

2 tablespoons coconut flour

1 teaspoon baking powder

1/2 teaspoon salt

1/4 cup unsweetened cocoa powder (optional for chocolate flavor)

1/4 cup melted butter

2 large eggs

1 teaspoon vanilla extract

8 oz cream cheese, softened

1/4 cup powdered erythritol or your preferred keto-friendly sweetener

1 teaspoon cinnamon

1 tablespoon melted butter (for brushing)

Optional: chopped nuts or shredded coconut for topping

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare the Dough: In a medium bowl, combine the almond flour, coconut flour, baking powder, salt, and cocoa powder (if using). Mix well.

      Blend Wet Ingredients: In another bowl, whisk together the melted butter, eggs, and vanilla extract.

        Combine Ingredients: Slowly add the wet mixture to the dry ingredients. Stir until a dough forms. It should be slightly sticky but hold together.

          Roll Out the Dough: Place the dough between two sheets of parchment paper. Roll it out into a rectangle about 1/4 inch thick.

            Make the Filling: In a separate bowl, mix together the softened cream cheese, powdered erythritol, and cinnamon until smooth and creamy.

              Spread the Filling: Remove the top layer of parchment paper from the rolled-out dough. Evenly spread the cream cheese mixture over the surface of the dough.

                Roll It Up: Carefully use the parchment to help lift and roll the dough into a log, starting from one long edge. Ensure it’s tight but not overly squeezed.

                  Slice the Roll: Cut the roll into 1-inch pieces and place them on the prepared baking sheet, cut side up.

                    Brush with Butter: Brush the tops with melted butter and sprinkle with additional cinnamon or any optional toppings if desired.

                      Bake: Bake in the preheated oven for 20-25 minutes or until they are golden brown and crispy.
