Ingredients
  

1 lb fresh salmon fillet, skin removed and cut into bite-sized cubes

1/2 cup all-purpose flour

1/2 cup panko breadcrumbs

1/4 cup cornstarch

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt and pepper, to taste

1/4 cup honey

2 tbsp soy sauce

2 cloves garlic, minced

1 tbsp rice vinegar

2 green onions, sliced (for garnish)

Vegetable oil, for frying

Instructions
 

Prep the Salmon: Rinse the salmon cubes under cold water and pat them dry with paper towels. In a bowl, season with salt, pepper, garlic powder, onion powder, and paprika. Toss to coat evenly.

    Breading Station: In one bowl, place the flour. In a second bowl, mix the panko breadcrumbs with cornstarch. Set aside.

      Coat the Salmon: Take each piece of salmon and first dip it into the flour, shaking off the excess. Then, dip it into the panko-cornstarch mixture, pressing down gently to ensure a good coating.

        Make the Sauce: In a small saucepan over medium heat, combine honey, soy sauce, minced garlic, and rice vinegar. Stir occasionally until the mixture comes to a gentle simmer. Let it cook for about 3-5 minutes or until slightly thickened. Set aside.

          Heat the Oil: In a deep skillet or frying pan, pour enough vegetable oil to cover the bottom (about 1/2 inch deep). Heat over medium-high heat until shimmering.

            Fry the Salmon: Carefully place the breaded salmon bites in the hot oil in a single layer. Fry for about 3-4 minutes on each side or until golden brown and crispy. Make sure not to overcrowd the pan; fry in batches if necessary.

              Drain and Toss: Using a slotted spoon, remove the salmon bites and drain on paper towels. While they are still hot, toss them in the honey garlic sauce to coat evenly.

                Serve: Transfer the crispy honey garlic salmon bites to a serving platter and garnish with sliced green onions. Serve warm with extra sauce on the side for dipping.
