8 oz (225g) cheese (mozzarella, cheddar, or a blend), cut into 1-inch cubes

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

Salt and pepper to taste

Vegetable oil (for frying)

Fresh herbs (optional, for garnish)

Instructions
 

Begin by preparing the cheese. Cut the cheese into 1-inch cubes and place them on a baking sheet. Freeze for about 30 minutes, ensuring they are firm but not frozen solid.

    Set up a dredging station by placing the flour in one bowl, whisking the eggs in a second bowl, and combining the breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper in a third bowl.

      Remove cheese cubes from the freezer. Take each cube and coat it first in the flour, shaking off any excess. Then dip it in the beaten eggs, allowing any excess to drip off before coating it with the breadcrumb mixture. Press the breadcrumbs onto the cheese firmly to ensure an even coating.

        Preheat a deep skillet or frying pot with about 2 inches of vegetable oil to 350°F (175°C). You can test the oil by dropping a small piece of bread into it; if it sizzles, the oil is ready.

          Carefully add a few cheese bites at a time to the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until they are golden brown and crispy.

            Use a slotted spoon to remove the cheese bites and place them on a paper towel-lined plate to drain excess oil.

              Serve hot, garnished with fresh herbs if desired. Enjoy with marinara sauce, ranch dressing, or your favorite dipping sauce!
