2 medium zucchinis

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1 cup grated Parmesan cheese

4 cloves garlic, minced

2 teaspoons Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

Prepare the Zucchinis: Preheat your oven to 425°F (220°C). Wash and dry the zucchinis, then cut them into fry-shaped wedges (about 1/2 inch thick).

    Set Up Breading Stations: In three separate shallow bowls, place the flour in the first, beaten eggs in the second, and mix the breadcrumbs, grated Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper in the third.

      Coat the Zucchini: Dredge each zucchini fry first in the flour, shaking off excess, then dip into the beaten eggs, allowing any excess to drip off. Finally, coat them well with the breadcrumb and cheese mixture, pressing lightly to adhere.
