2 large yellow onions

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

1 tsp smoked paprika

1/2 teaspoon garlic powder

1 cup buttermilk (or milk with 1 tbsp of vinegar)

1 cup panko breadcrumbs

Vegetable oil for frying

Slice the Onions: Peel the onions and slice them into 1/4-inch thick rings. Separate the rings and place them in a bowl.

    Prepare the Batter: In a mixing bowl, combine the flour, baking powder, salt, black pepper, smoked paprika, and garlic powder. Mix well. Pour in the buttermilk and whisk until a smooth batter forms.

      Coat the Onion Rings: Heat the vegetable oil in a deep skillet or deep fryer to 350°F (175°C). Dip each onion ring into the batter, making sure it’s thoroughly coated. Allow excess batter to drip off.

        Bread the Rings: After battering, dredge the onion rings in panko breadcrumbs, pressing gently to ensure the crumbs stick well.

          Fry the Onion Rings: Carefully place a few battered and breaded onion rings into the heated oil. Do not overcrowd the pan. Fry them until they are golden brown and crispy, about 2-3 minutes per side. Use a slotted spoon to remove them and place them on a paper towel-lined plate.

            Repeat: Continue frying the remaining onion rings in batches, ensuring the oil remains at the correct temperature.
