Ingredients
  

2 cups fresh corn kernels (or 1 can of corn, drained)

1 cup all-purpose flour

1/2 cup cornmeal

1/4 cup finely chopped green onions

1/4 cup finely diced red bell pepper

1/4 cup grated Parmesan cheese

1 large egg

1/2 cup milk

1 teaspoon baking powder

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and pepper to taste

Oil for frying (such as vegetable or canola oil)

Prepare the Mixture: In a large mixing bowl, combine the corn kernels, all-purpose flour, cornmeal, green onions, red bell pepper, and Parmesan cheese. Mix well to combine all the ingredients evenly.

    Make the Batter: In a separate bowl, whisk together the egg and milk until well combined. Add the baking powder, smoked paprika, garlic powder, salt, and pepper to the egg mixture and stir together.

      Combine: Pour the egg mixture into the dry ingredient mixture and stir until just combined. Be careful not to overmix; a few lumps are okay.

        Heat Oil: In a large frying pan, heat about 1/4 inch of oil over medium-high heat until hot but not smoking (around 350°F or 175°C).

          Fry the Fritters: Use a spoon or scoop to drop spoonfuls of the batter into the hot oil. Flatten them gently with the back of the spoon if desired. Fry in batches to avoid overcrowding the pan. Cook for about 3-4 minutes per side or until they are golden brown and crispy.

            Drain Excess Oil: Once cooked, remove the fritters using a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
