1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Vegetable oil (for frying)

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust to taste)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, combine chicken pieces with buttermilk. Cover and refrigerate for at least 30 minutes to tenderize.

    Prepare the Dry Mixture: In a separate bowl, whisk together flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper.

      Heat the Oil: In a deep skillet or frying pan, pour in about 1-2 inches of vegetable oil and heat over medium-high heat until it reaches 350°F (175°C).

        Coat the Chicken: Remove the marinated chicken from the refrigerator. One piece at a time, dredge each chicken piece in the dry mixture, ensuring an even coating. Shake off any excess flour.

          Fry the Chicken: Carefully drop the coated chicken pieces into the hot oil, cooking in batches to avoid overcrowding. Fry for about 5-7 minutes or until golden brown and crispy, flipping occasionally. Transfer cooked chicken to a paper towel-lined plate to drain excess oil.

            Make the Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, and sriracha. Mix well until smooth.

              Toss with Sauce: Once all the chicken is fried and crispy, place it in a large bowl. Drizzle the bang bang sauce over the chicken and gently toss until well-coated.

                Garnish and Serve: Transfer the crispy bang bang chicken to a serving platter. Top with chopped green onions and sprinkle with sesame seeds. Serve immediately with extra sauce on the side, if desired.
